December 21, 2010While our beloved Petra was struggling against mighty odds to get across the pond, the Diners of Tuesday Night Dinner took matters into their own hands and had a pot-luck Dinner on their own. Herewith, the evidence that we wouldn’t all starve if Petra didn’t feed us. Wait, I mean, PETRA, COME HOME, WE’RE HUNGRY AND WE DON’T KNOW HOW THIS STOVE THING WORKS.

Roast Chicken
Corn Pudding
Salad
Giant Honey and Oat Cookies
The roast chicken is Ina Garten’s recipe from Barefoot Contessa (the first book): stuff with garlic, thyme, lemon, brush with butter, sprinkle with salt and pepper, scatter onion wedges around, and roast at 425 for about an hour and a half.
Corn Pudding needs no introduction. Indeed, what words are left to describe this exquisite creation? Made of corn kernels and sunshine, held together with pure love, it is Nature’s perfect food and a time-honored remedy for colds, depression, cholera, and rickets.
Giant Honey and Oat Cookies (from the newfangled 1998 Betty Crocker Cookie Book, not to be confused with the in some ways superior original and more cheesy edition).
1 and 1/2 cups sugar
3/4 cup butter, softened
2/3 cup honey
3 egg whites
4 cups rolled oats
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
Heat oven to 350. Grease cookie sheet. Beat sugar, butter, honey, and egg whites with mixer on medium speed. Stir in dry ingredients. Drop dough by level 1/4 cupfuls (or use an ice cream scoop) 3 inches apart onto cookie sheet. Bake 11 to 14 minutes or until edges are light brown (centers will be soft). Cool 3-4 minutes on cookie sheet, then remove to wire rack.
There were no survivors leftovers.
I can’t believe you didn’t take this opportunity to have an all starch meal. I’m feeling vaguely disappointed in you. Whoever you are.
At least we–um, I mean, they dispensed with that silly green vegetable side dish notion Petra always insists on.
We decided it would be totally unfair to do that when F could not be with us. Stupid man, going to Prague without us! Pffft.
