The only downside to this dish is the clean up. Even lined with a double layer of foil, the burned on glaze took serious soaking and elbow grease to remove.

Spiced Broccoli with Coconut
I was going to make broccoli rabe or broccolini, but apparently there’s some broccoli related agriculture crisis going on in California? Upshot was broccoli rabe and broccolini were both about $4/bunch. The broccoli was probably more expensive than usual too, but not quite that expensive.
This is basically a riff on Spiced Coconut Spinach (recipe previously given: There Are Worse Hobbies)
I sauted red onions with some chopped fresno chilis until they were caramelized. I added piles of grated garlic and ginger and cooked them with the caramelized onions for about 30 seconds. I cooked the broccoli separately until it was just barely tender, and then tossed it with toasted coconut and the onions until everything was well mixed.
